Everything is better with bacon.   In yakitori (BBQ chicken skewers in Japan – which I will post a great recipe for in the near future), they use bacon to wrap asparagus, quail eggs, scallops and even green onions.  So bacon wrapping has been around for awhile and for good reason, it is delicious!   However, after a while of making the traditional version, I started looking for something that would give it an extra dimension in complexity.  After some experimenting, I came to adding 2 more ingredients that really took this traditional dish and added that extra kick I was looking for!  If you are really feeling bold, you could add a thinly sliced, lightly fried garlic on top as well.  It really sets that the dish on ?.

This dish is keto friendly and also adds all the benefits that asparagus brings to your digestive system and health!

The way I cook this dish is with a toaster oven.  I really prefer using a toaster oven over traditional ovens since there is no preheating and in my opinion, does a better job at crusting since the food is closer to the heating element.  I believe these instructions would work in a traditional oven, but the cooking times may differ from what is listed.

Ingredients

  • 3 Slices of Bacon Roughly 10 inches in Length
  • 4-5 Stalks of Asparagus
  • 12 Toothpicks
  • 1/8 of a Jalapeno
  • 12 Drops of Sriracha

Directions

1) Gather all the ingredients.

2) Cut bacon vertically into 4 equal parts. You should end up with roughly twelve 2-2.5 inch bacon pieces.

3) Cut asparagus into 2 inch lengths. You will need 24 pieces which will roughly be 4 stalks of asparagus.

4) Place 2 pieces of asparagus onto the bacon piece and roll up asparagus with bacon.  Once rolled, place a toothpick through the asparagus to maintain shape throughout cooking (try to keep the conjoining point on the bottom to help maintain shape).

5) Place aluminum foil over toaster oven tray and place bacon on the tray.

6) Set toaster oven for 460F and cook for 15 minutes.

7) While waiting, thinly slice 12 pieces of jalapeno. Remove seeds from slices and set jalapeno aside.

8) Once toaster oven is done, pull bacon out, plate, and remove toothpicks (the toothpicks should cool to touch in about 30 seconds).

9) Add jalapeno slices on top and drop Sriracha sauce on top of each bacon.
